Extra Cowboy Grass

A celebratory three year anniversary release - Brewed with Pilsner malt, Carahell, and rolled oats. Bittered with Citra in the keltle and whirlpooled with Citra. Open fermented with a subpar harvest from "Cowboy Grass" and supplemented with a brick of English Ale yeast. Fermented at 21°C and transferred to a closed vessel at the tail end of fermentation on to 2 lb's per barrel of Citra. Once fermentation was complete, the vessel was crashed to 1°C and conditioned for a week to absorb the CO2 in the headspace before being transferred to another vessel on to 2 more Ib's per barrel of Citra. After a final two weeks of cold conditioning we are proud to present... this beer.
