Bonny was formerly known as Grafter Rosato, if the style rings a bell for you. The finished cider made from bittersweets and Northern Spy apples, was rested for about a week on spent Sangiovese grapeskins sourced from Southhold Cellars in the Texas Hill Country. We aged the cider for a year, undergoing slight malolactic fermentation. The result is a lovely, acid-driven Rosé cider, the extended skin contact time and aging brings a little mixed culture funk to the lychee, currant and nectarine notes.Residual sugar: nil 7.9%ABV
