The second dashi is made from the dashi husks of kelp, dried sardines, and bonito flakes used by Tanaka to make the dashi, and udon scraps are added to the brewing water along with malt, using every by-product of the udon.A miraculous fusion of udon and saison, with the delicious flavor of the dashi, the acidity from the yeast, the dry aftertaste, and the minerality of the rock salt in perfect harmony.
