We decided to go big with our first true fruited sour with over 150g/L of fruit puree packed into this experiment. Even with a 3:1 ratio of plum to elderberry, the elderberry still shines bright. If you are an inexperienced elderberry connoisseur, you are in for an interesting ride. While elderberry is often known for its wonderful antioxidant properties and health benefits, it has a distinct aroma and flavour that sets itself apart from other common berries. Look forward to a tart earthiness alongside a lightly pithy bitterness balanced by notes of overripe stone fruit. This sour is definitely one of a kind.
