Around the time we released Prophecy of the Clock last fall we gathered acorns for this beer. They spontaneous ferment dry in a mason jar gaining a unique cocoa-apricot aroma (and reducing their harsh tannins). A few weeks ago we infused them into this year's batch of our Czech Dark Lager!
