Of the Farm: Ancho Cherry

Chili peppers and fruit and cider?! We're giving it a go! We've taken loads of Ancho Chilis, a dry-aged Poblano pepper, and it's lightly sweet, smokey, and not-too-spicy profile, a touch of the much spicier Arbol Chilis, blended them up with a whole bunch of cherries from our friends at Weaver's Orchard, and rested it all in Cider for about a moon cycle. It came together for a delightfully dry, cherry-forward cider, with underlying hints of that lovely earthy pepper and just a bit of heat. Turns out Anchos and Cherries are the perfect match!
