Across the Universe is an imperial stout aged 14 months in an Eagle Rare Bourbon Barrel. We then adjuncted it with chocolate, vanilla beans, toasted coconut, and cinnamon.The aroma is full of rich decadence. The ingredients all shine in the aroma. It is hard to say which ingredient shines the brightest or hides in the shadows. It has a balanced medley of boozy barrel character, base stout flavor, and all four adjuncts. It tastes like a mix of warm Samoa cookies that have sat out in the sun and that deliciously cinnamon-forward Mexican hot chocolate.Like all imperial stouts, the flavors bloom and open more as the beer warms. The finish is a thick, syrupy, fudgy candy bar with a touch of cinnamon.
