Side Trail is a foraged perry. When our friend and forager Nicolas brought us these unnamed wild pears, we couldn't say no. They were incredible tannin bombs when first picked, but after a little time to ripen, the tannins softened considerably and the aroma completely changed.Citrus, spice and dried lavender in aroma, creamy tangerine meringue in flavour.Residual pear sugars combine with a soft lactic note to create that citrus meringue vibe.The aroma is complex, spices and soft lavender notes are present throughout. There's a touch of volatile acidity here, but just enough to lift the other aromas.
