As winter well and truly sets in on the Adelaide Hills, Sinister Eye lurks in the shadows. It’s an outright aggressive Black IPA in all forms. We’ve utilised Rye malt to bring with it a spicy and herbal touch that compliments our use of classic West Coast hops. The use of black malts has been kept low however, with the intent to reduce the roast and chocolate notes, and allow the 19 gram per litre dry hop to shine through. Chinook and Simcoe provide an abundance of pine and citrus hop character, meanwhile a combination of Mosaic and Mosaic Cryo bring freshness with a burst of stone fruit and tropical citrus.
