The Collaboration train keeps rolling with the 3rd offering in our “Side Effects” series of bochet styled meads made with our good friends at Standard Meadery. Pulling out all the stops for this one, we took Tupelo blossom honey – a honey so amazing that Van Morrison named an album after it – and slowly bocheted (caramelized) it in an all day process. Spending 11 months tucked away in a bourbon barrel, the resulting mead is amazingly complex and reminiscent of a well-constructed port.
