We took an ancient and archaic style of beer—from the time when hops were merely a recommended ingredient, and brewers used a variety of other plants and spices—and transformed it into an IPA. We used local botanicals that connect the two worlds well: basil, lemongrass, peppermint, juniper, white pepper, and cloves
