#NoFilter is an exercise in laissez faire. A beer where we chose to go by feel and forget about calculations.No Filter is like an evening meal you make for yourself on a saturday, without following any particular recipe but with a lot of attention to certain details nonetheless. You open your pantry cabinet, you undo that bottle of wine your friend gifted you several moons ago, and you let it guide you.You don't bother measuring the ingredients. You go by feeling.And that's how we ended up using a mysterious landrace yeast, from lady Rima's farm up in Chuvashka, thrown on top of a base beer full of unmalted wheat and oats.Of course we open fermented it. Of course with no temperature control.The result is a banana and bubblegum explosion, with an assertive clove-y peppery finish.It might not be as elegant as a Hefeweizen, but it's damn tasty and refreshing, and as rustic as it gets.
