Lost In Leith - Barrel-Fermented Golden Sour (w/ Acid Brewing Cartel)

Over 2 years ago we had Ciaran of the sadly closed Acid Brewing Cartel in for a Lost In Leith collaboration brew. The brewers of the time and Ciaran made a raw ale, a Norwegian farmhouse brewing technique that removes the boiling step to retain more protein and body. Barrel-fermented in a blend of rioja and Bourbon barrels with our fruit-forward house yeast strains, it was blended and refermented for a further 2 years using a blend of Brettanomyces strains. Before packaging, the beer was dry-hopped with Citra in stainless steel before packaging.It's been a long-time to get to this point, but worth the wait. It's complex, citrusy with lots of funk, supported with gooseberry, elderflower and vanilla.
