Thiols are compounds found in the lupulin glands of hops that, when added to the mash, are unlocked by enzymes. Then in the fermentation process, a special yeast rearranges the compounds, converting the thiols into new intense fruit flavours, previously thought to be uncharacteristic of these hops.
