bottling date: 23/07/2024We brewed a low alcohol lambik - a true meerts, on which we macerated Pineau D’Aunis and a small portion of Chenin Blanc, originating from the illustrous Jean-Pierre Robinot. We macerated the grapes for over five months on a wooden barrel, with a final fruit intensity of over 350 grams of spent grains per litre of grape meerts. All grains for this brew & blend were sourced in Pajottenland.
