Washington state red-raspberries are Lacto fermented with ginger & Persian black limes to brew a beer that takes inspiration from vintage Raspberry Sodas bottled by the Bombay Parsi community in early 1900’s.To come as close to what a vintage raspberry beer would taste, we restricted ourselves to brewing only with old world ingredients & spices that would have been available to brewers 100 years ago.Its also fascinating to think why Parsi bottlers would make a raspberry soda, a berry not native to India, but grows abundantly in the Persian wilderness, the same geographical area from where the Parsi community migrated over a millennia ago.So was it from this cultural memory of migration & nostalgia that the vintage Parsi bottlers subconsciously wanted to re-create & share a flavor uniquely linked to their identity.
