In 2020 we prepared a dunkelweizen for the sauerkraut & sausages season in our pub, however lockdown numberwhichever happened, but luckily we had an empty oak wine barrel around to the save the situation.2 years later it's probably difficult to recognize what the beer started of as, except maybe for the hints of cloves still present, but some cinnamon also developed in the meantime, along with the vanilla tones from the barrel itself. Due to the secondary fermentation with the wild microorganisms in the barrel lovely sourness was developed as well, which we additionally built up with some sour-sweet dried sour cherries, as the final component to justify the name of this beer.
