Brewer Westy makes no secret of his love for distilling and gins. Here is his single keg, an experimental brew with the usual bittering ingredient of hops being removed and substituted with another variety of bittering plant called Wormwood (artemisia absinthium).During the 18th century England, wormwood was sometimes used instead of hops in beer. Reputed as being one of the most bitter plants known it is a common ingredient in other alcoholic beverages such as abstinthe, vermouth and bitters.The bitterness is not up front or detectable at first be makes an appearance about a minute after consumption. The type/level of bitterness differs from hops and imparts a slight aniseed flavour and aroma.
