A blend of buckwheat and golden sour beers aged in oak barrels with local honey, wine grapes, tonka beans, vanilla and cherry noyaux.Bees dance to share directions tofood, water, and other desinations.Our destination was a delicious honey beer, butevery journey needs a starting point...We began by brewing a small mead and then blendingselected barrels of sour beer into it. The historyof some of these barrels is too involved to recountfully here, but suffice it to say, some had liquidsthat go back 4 or more years and consisted ofno fewer than 5 different beer recipes plus wildchardonnay and pinot noir components. Complementaryvanilla, almond, and nutty flavours were infusedusing dried and aged cherry noyaux, tonka beans, andvanilla beans. A final burst of bee pollen elevatedthe honey character to new heights.Welcome to our intended destination!Thanks, bees!
