Sour with Phantasm, aged in Sauvignon Blanc Barrels with Chardonnay GrapesBottle Release 12/23 - $16/500 mLWe layered this beer with white wine grapes at each stage of the process. Brewed with dried New Zealand Sauvignon Blanc grapes, and fermented with a Thiolized strain to release their intense tropical aromatics. Then soured in Sauvignon Blanc barrels with a house culture from our friends at Bissell Brothers (Portland, ME) for deeper vinous flavor and acidity.
