Cosmic Dust: Sunrise - Thiolized IPA

Описание

Cosmic Dust is a new Gravity series showcasing thiol-rich hop varietals and the transformative power of modern IRC7 yeasts. For the inaugural version, we've leveraged several preparations of Nelson Sauvin and Motueka hops, all sourced from New Zealand's Sunrise Valley. These late additions are packed with free thiols, but a specially-tuned grain bill, early mash hopping, and Phantasm help load up our the wort with thiol precursors as well. A very special yeast strain then transforms these odorless bound thiols into highly aromatic free thiols for a double dose of complex fruit character. The result is an almost magical blend of typical New Zealand hop character – lime zest, wildflower blossoms, passionfruit – with the rich thiol complexity of Sauvignon Blanc grapes, freshly cut grass, and ripe, floral guava.
