"In celebration of this years hop harvest and wine vintage. Pouring a vibrant, hazy yellow gold with aromas of white wine, spring gooseberry, fresh squeezed meyer lemon, green tea and a kiss of pineapple that swirl around the nose. To enhance complexity and depth of the uniquely white grape character provided by the light additions of Nelson Sauvin and Hallertau Blanc , we introduced Australian Sauvignon Blanc grape must into a sour co-fermentation of Champagne yeast and Sacch. ""bruxellensis"" Trois. Fermentation on French oak rounds out the freshness of the must while a restrained tartness and the touch of Brettanomyces funk promotes balance.
