This single variety cider was spontaneously fermented before being transferred to a 300L Bordeaux barrel made from American oak where we introduced our house culture. It was aged for 9 months before packaging with sugar and champagne yeast.Yarlington Mill brings richness and dried fruits against a background of structured, vinous tannins and subtle vanilla from the barrel. It finishes with honey dryness and a hint of funky caramel.
