NORTHERN IPAEmbracing our regional heritage here in Atlantic Canada, Land and Sea was devised as another exploration in our 100% Canadian ingredient brewing project - this time a style we're dubbing Northern IPA: all Canadian, celebrating local hops, malt and yeast. Land and Sea is brewed with a hefty base of New Brunswick 2-row malt from Proud Maritime Malt House in Northern NB, plus a dash of malted wheat from Alberta, and some dark Munich-style malt from BC. We hopped and dry-hopped it pretty generously with the classic 'C' hops - Cascade, Chinook, Centennial - from Lakeview Hops in Harvey, NB - then fermented the whole thing with a brand new, terpene-releasing yeast strain from Escarpment Labs in Guelph, ON, aptly named TERPS. We get lots of candied orange, pineapple pulp and evergreen qualities, layered over a fairly soft body with restrained bitterness.
