Blackberry Pale Sour Aged in Wine Barrels with Spanish CedarBottle Release 1/18/25 - $16/500mL BottleThis blend started with two threads aged in well-used white wine barrels. As we were tasting barrels we noticed one had a bright grapefruit-like note from some Spanish cedar spirals in it. We found a more earthy-acidic barrel to balance it. It needed something else though... so we got fresh blackberries from Baugher's Orchard (Westminster, MD) for their beautiful color, and deep jammy flavor!
