Collaborator: Ainara Otano of Petritegi Sagardoa. Apples: traditional Basque cider varieties including Errezila, Mokoa, and Txalaka. Fermentation: native yeast, no sulfates added, unfiltered. Aging: stainless steel, four to six months. Notes: bone dry, funky, green apple, citrus, complex phenolics.
