Undertone Preserves: Balaton Cherry (10/26/22)

For this blend of Undertone Preserves, we added four pounds per gallon of freshly picked Utah Balaton cherries to our oat farmhouse ale. The oats used in Undertone provide complex esters that are delicate and assertive, and still shine through even with the cherries. Balaton cherries are one of my favorite to use, with their rich dark color and classic cerise notes. There’s even a hint of marzipan on the finish!
