Intertwined: Dornfelder

This coferment started with the maceration of 40% Dornfelder grapes and 60% handpressed apple juice from locally sourced apples. After 3 days of skin contact, it was pressed, wildly fermented and aged for several more months. The result is a hybrid sparkling cider/wine.
