This beer drinks exactly like a mimosa, with a spritzy complex funk at the end. We brewed this beer with a wasp-derived yeast, Lachancea Thermotolerans, is a higher glycerol producer which makes the mouthfeel thick and soft. It imparts fruity characteristics and a cleanliness we really like.We loaded up this venomous sour with tangerines and mango and they meld together exceptionally well with what the yeast has created in the base Berliner.The aroma is the mango pineapple blend tropicana and the finish is a sharp sparkling rosé.
