Funky Blender Preserves Red Currant & Blackberry (2/2/21)

One of our growers in Paionia had a bumper crop of red currants last summer and offered us enough to have some fun with. Having never used this fruit before, I decided to play it safe and added 30% Triple Crown blackberries to the blend. The beer is all peppery currant in the nose with the body we get in our blackberry beers, it's amazing. When I first went to try a sample of this after bottling, I took the cage off and watched the cork start to pop without any help, very alarming. The beer gushed a bit but tasted amazing. Knowing the danger of such an explosive cork, we decided to uncork every bottle and hand crown them for a safer drinking experience. Please open these cold and gently!
