Double Barrel Foeder Cherries

Mixed culture fermentation that was fermented and conditioned in an American oak foeder on sweet and sour cherries and finished in a freshly dumped Elijah Craig bourbon barrel. Complex and tart, this Kriek-inspired ale has wonderful cherry orchard notes that play perfectly off of the bourbon character from the barrel. This is served still, without carbonation, in a method similar to traditional Belgian Lambics. The lack of carbonation softens the mouthfeel and allows the natural acidity to dance off the barrel notes. This one blurs the line between beer and natural wine.
