A blend of hand-foraged Salt Spring Island wild seed pears, tannic perry pears, asian pears, and quince. Cold fermented using native yeast, then bottle conditioned to carbonate. Lightly sweet from the pears' residual sugars, with hints of melon, citrus, and Manuka honey
