Playing with fire is a beer made for the Terroir Project Festival conceptualised by Firestone Walker Brewing Company. A fermentation of golden wort with and by hand harvested Semillon bunches from Tyrrell’s Estate in Pokolbin, NSW.A unique beer which is fermented by the yeast native on freshly harvested grapes rather than our house culture. The 2021 edition was made via the fermentation of golden wort with and by hand harvested Semillon bunches from @tyrrellswines in Pokolbin, NSW. The grapes come from some younger vines in the famed Johnno's plot. These young vines were removed after the ’21 harvest and at the time @christyrrellswines referred to them as the ‘Wildflower’ plot.Potentially it was tongue in cheek, but I’m gonna go ahead and believe its true that for a short few years there were a handful of vines in that red dirt which bore our name. The concept of the project, as expressed by Firestone Walker, is for 'each participating brewery to produce their own distinct hybrid, but with three binding stipulations: we all had to use the same grain bill, the same maturation period in barrels and the same co-fermented percentage of wort and wine grapes'. The kicker - all grapes had to be grown within 100 miles of each brewery. The festival to celebrate the common release of these beers will be hosted in Oregon later this month. Sadly we will not be in attendance, however wanted to release our version for the collectors amongst us.
