For this edition of our funky cider, we fermented sharp bittersweet and sharp heirloom qpple juice with our house mixed cultures. This juice concoction was then racked into some fantastic, freshly emptied gin barrels from a certain renowned distillery in Vermont. The cider emerged splendidly bright, boasting a wonderful botanical character balanced by a delightful oakiness.
