This farmhouse style saison was brewed with a variety of grains before fermenting in stainless steel with ourhouse mixed culture. We then allowed for a one month maceration on seconduse Wisconsin peaches and Organic Minnesota plums. This wild ale wentthrough natural carbonation in the keg using residual sugars in juice from theplums. Floral sake, limestone minerality, fresh turned earth and gently acidity pop from this Midwest saison.
