Sometimes we divert 5 gallons of a batch to try a unique fermentation. In this case that was a pale ale fermented with a strain of wild yeast isolated from a cacao pod. The result had some interesting spicy and fruity notes, but we wanted to help that along with a modest dose of raspberries and lemon zest.
