Funky Blender Preserves – Elderberry (11/30/21)

One of our smallest growers, if not the smallest we work with, offered to pick all the elderberries they had growing on a few of their plants. Finally, we had enough berries to do a single barrel fermentation. We chose a mature barrel of Funky Blender and added the fruit right to the barrel like it was 2014. After months of aging, we achieved intense color, a hint of pepper and plenty of berry character.
