Preoccupied with Memory and Expectation is a 6.4% ABV mixed culture saison made with Japanese red shiso leaf, burnt honey, and dry hopped with Sabro hops. This beer presents with notes of wild strawberry, passionfruit, satsuma orange, and honeyed toast beneath a lily-floral perfume. Flavors of white peppercorn, gooseberry, and coconut are carried over the palate and complemented by a creamy, blooming, ocean-spray carbonation. Medium body and silky in texture. Preoccupied with Memory and Expectation is one of the more tart beers in the KT line-up thus far and offers a zippy lemony acidity overlaying a soft, earthy, tea-like bitterness.
