Peccavi Cab Sauv: notes of grapefruit zest & raspberry, infused with sea salt. Pairs well with lamb, turkey, soft cheese, & shallots.Our latest obsession is Piquette. It's an old French method of using the grape pomace from the wine-making process, & adding water to make a low ABV wine.We decided to sub water for our barrel-aged gose, and added in the grape pomace from our wine hybrids. The gose's balance of acidity, salinity, citrus zest, and light oak imparted from the barrel, is the perfect partner for the complex notes from the pulpy fruit of the grapes. This marriage conditioned and naturally fermented in Sauvignon Blanc French oak barrels makes for an absolutely summer-style beverage free of regrets.
