Dashi

Our second dashi/ramen inspired sour ale. For this batch we used kombu for bittering (instead of hops) and infused the beer with shitake mushrooms and oak smoked parsnips for some light umami notes. This beer is vegan friendly - no fish based products were used. The beer was fermented with a mixed culture (lacto, sach and brett) to bring some acidity to the beer along with some very light funk.
