Dancing In Time is our collaboration IPA with our friends at Deya brewed with all UK hops, a celebration of what we have on our doorstep. Once a year the hop harvest in the UK comes alive, collected from Huskin Hops just 45 minutes away from the brewery, these fresh hops have their valuable hop oils completely in tact and need to be used immediately after harvest to retain their freshness, leading to a unique flavour profile.We also used a technique called mash hopping to gain a more complex flavour profile with a huge addition of freshly picked UK Ernest & UK Cascade added late in the boil, alongside a generous dry hop UK Chinook & UK Cascade to create a beer with a citrusy, floral aroma all backed up with a piney bitterness and slight spicy, grassy notes from the fresh hops.
