Ah, Mosaic – where would we be without you? From the very first beers we ever brewed way back in 2018 in Polly’s old stable, all the way up to the present day in our new unit, Mosaic is a hop varietal that has followed us on our journey to try and produce the best beers we possibly can. We’ve decided to pay homage to this journey with a little callback to one of the standout beers from our dearly departed Originals range, and one that we look back on most fondly, Ekuanot Mosaic. Shed a Light brings this recipe firmly into 2021 with all the techniques we’ve learned in the last three years; letting Mosaic take the lead with a 30kg dry hop charge imparting a whole host of huge juicy tangerine, mango and berry notes, with just a little bit of herbal complexity from Ekuanot to balance things out.
