3rd Room (2nd edition)

The second edition of 3rd Room, this time a blend of Chardonnay and Pinot Noir barrels.The base beer was lightly hopped and fermented with our house ale yeast, and subsequently transferred to barrels where it was dosed with what has become our house mixed-culture of brettanomyces and bacteria. The beer was left to condition with this mixed culture for about 15 months before being packaged and left to bottle condition for an additional 5 months.The resulting beer is incredibly vinous, with Pinot's red berry and Chardonnay's light pear and buttery character. Acidic, effervescent, dry, complex with some subtle funk to complement.
