A very complex, full bodied 21 month barrel fermented and aged Plum and Cherry Jerkum.We first ferment plums with their native yeast in french oak Pinot Noir barrels from the Russian River. The Jerkum aged for over a year in the barrels until last season (2018). We then harvested cherries and added a HUGE amount to the barrels and then let the Jerkum and cherries mingle and ferment slowly but surely for over 7 months. The result is a very complex Cherry Jerkum. Slight sourness, big and rich plum and cherry notes. The barrel contributes great tannin and depth to the fruit all the way through.
