Heirloom is our table saison brewed with New Jersey grown and malted pilsner, chit malt and malted wheat in equal proportions. We bittered with aged hops and added fresh Styrian Goldings through out the kettle. Heirloom is open fermented with our mixed saison culture before being racked to oak at the tail end of primary fermentation were it ages until bottling.Before bottling, Heirloom is blended and given a light dry hopping with EKG. The dry hopping provides additional structure to the mouthfeel and some hay-like aromatics that evolve over time with Brettanomyces in the bottle. Heirloom drinks with a light body and acidity and refreshing, high carbonation.
