Wood aging lagers is a mostly-recent innovation, most historical lagers were aged in barrels sealed with pitch. It still makes a delicious beer! We aged 5 gallons of our Crescent Hill Vienna Lager on Yellow Birch wood honeycombs. Yellow Birch enhances the caramel and patisserie flavors from the malt, while adding some brighter notes of lemon.
