We’ve taken an unlikely Australian and American duo – Galaxy and Amarillo hops – and thrown them both into this West Coast style IPA to see if they can play nicely together. Our conclusion: they could be best mates!We’ve used a lighter malt base to really allow the hops to take centre stage, so Hop Til You Drop pours a beautiful light golden colour. Tropical fruits from the Galaxy dominate the aroma, with loads of fresh, sweet pineapple up front. Amarillo then takes the wheel, with a light pithy-citrus bitterness on the palate which is the hallmark of this classic American hop; balancing perfectly with the restrained malt profile. You’re then treated to a nice, dry finish, making sure that this Aussie-Yank combo is the life of the party!
