Vanilla Thief is a small batch composition of Imperial Stouts aged in Willett Bourbon barrels for 21 months. The final blend was conditioned on 2 pounds of Comoros Vanilla beans per barrel for one month. Comoros beans are from a small island off the Eastern coast of Africa well suited for producing high quality vanilla. These beauties contain a special compound called Vanillan that gives vanilla its creamy flavor and perfume. This same compound is also found in oak and can impart this flavor into bourbon. Comoros beans have an added bonus of chocolate and marshmallow notes with more depth of flavor.
