The Craft : Our signature mead made with sour cherries, sloe berries, and honey. The base always starts from a fruit wine. During fermentation, we gradually add honey until we approach the original sugar content of the ripe fruit.The Experience : In this edition, we incorporated the unique character of the sloe berry. A small fruit known for its concentrated flavour and tannins, ripening only after the first frost. Its earthy and spicy notes build on the fruity characterof the cherries, in harmony with honey. Perfect with game, pâté, or dark chocolate.
