In Recognition is a special bottling of a single cognac cask in which our spontaneously fermented golden ale matured for 41 months before bottling, unblended. Brewed in the spring of 2018, this puncheon was topped up once before a long slow fermentation sous voile. Naturally refermented in the bottle from the addition of NJ blueberry honey.
